January 10, 2010 - Weekending & Gingerbread goodness

This weekend has been beautiful!  Cold but beautiful.  As always our weekend was spent on the mountain skiing.  The kids are busy with their race teams at the mountain preparing for upcoming races  in just a few short weeks.   George & I are just loving the fabulous January ski conditions, time alone together and the majesty of winter all around us.  Even at -1 degree f. this morning, we still couldn't wait to enjoy our second day in a row of non-windy partly sunny ski days!
(so many days here in New England are snowy, cold, windy and just down-right wicked - and we ski those days anyway :-)
Cole & Nikki are loving ski racing this year.  Cole is getting faster and faster everyday and is looking more like a racer each time is see him - which is a little scary for me (I really hate the inevitable crashing that comes with racing).    Nikki, while getting faster,  seems to be much more into the social side of skiing ("she's such a girly girl" - can you tell she's 7?) and her newfound ability to ski the difficult moguls and glades quite well.   Now I like to ski fast and love all the black diamond trails you can put in front of me, but on Saturday afternoon Nikki took me "into the trees" (glades) - this was an experience I completed with breath held and eyes partially closed, one I'm not sure I'm ready to attempt again soon!  I am happy that she has become such a confident, fearless skier like her brother (and father) though and she is always smiling when she's on skis, so I couldn't be happier.
On the racing front Nikki was unfortunately disqualified in her race this weekend (she missed a gate), but Cole was pleased to cut nearly 4 seconds off his course time, a good start to the season.

To warm us up on Saturday, post skiing, our table was graced with a bit of Smitten Kitchen's Gingerbread Goodness (attempted by me, with success!).

Gingerbread Apple Upside-Down Cake
to be exact...

And just when I couldn't imagine a dessert more lovely and perfect than my favorite dessert,  Tiramisu.....  This came along, it is truly divine, sinful, and I must say just lovely (there are simply not words to describe how wonderful this really is)...  no one in our house could be stopped.   There is none left at all, guess I shall have to make another this week :-)   Here's to hoping your weekend was just as lovely as ours, outdoors and on your kitchen table.

If you'd like to make your very own Gingerbread Goodness
(and I really encourage you to do it as soon as possible)

  1. Wow, that cakes looks so yummy. Your kids are so lucky to have a mom who loves to bake and cook. It's always such a reluctant chore for me. I try different ways to motivate myself to want to cook, but in the end I dread it and put off cooking dinner until too late to anything fancy/fun. I do remember how much you really got into cooking when we were in PI, and I envied you for that. Can I clone you to come cook for us...LOL?

How fun for you kids to get so much skiing in their daily lives. What a fun life you guys have:)
